When I lived in LA, we went out to dinner a lot. Amazing Sushi was a regular occurrence. But since moving to the east coast those dinners have been few and far between and leaves me craving sushi rolls.
I love this rice bowl because it's easy and tasty and vegan! It is always good to find plant based recipes to add to your repertoire and you can save on money.
All you need is the following and combine and enjoy!
1/2 cup cooked sushi rice (cook according to package and ad a dash or rice vinegar to the water for flavor)
1 avocado cubed
1/2 cucumber diced
Bragg's liquid aminos (as a gluten free substitute for soy sauce)
I like to have my veggies in the fridge so they are cold when I add them to the hot rice i the bowl. YUM!
